Chicken Fried Noodles (Mine Frite)
Ingredients (Serves 2)
- 250 g noodles Mine Pompier
- ¼ white cabbage
- 2 carrots
- 1 chicken breast
- 1 egg
- Chinese chives (la queue l’ail)
- 1 tablespoon seasoning dark soy sauce
- 1 tablespoon white wine
- 1 garlic clove
- 1 tablespoon of vinegar
- 1 teaspoon of sugar
Method
- Place Peel the carrots and cut them into small sticks then slice the white cabbage and reserve the vegetables.
- Cut the chicken into pieces and pepper them. Cook the noodles for 2 minutes in a saucepan of boiling water then rinse thoroughly with cold water to stop cooking and reserve them.
- Then heat a pan with very little oil and break the egg in it. Cook it by mixing like scrambled eggs, once cooked, put aside and cook the chicken over high heat. let the pieces brown on all sides before adding the carrots, cook for 2 minutes then put the cabbage and cook for another 2 minutes.
- Then add a little soy sauce, noodles and chives. Take 2 tablespoons and mix well by lifting the noodles, possibly add a little soy sauce if the noodles are not colorful enough.
- Once the noodles are well covered with soy sauce, pour a little white wine and mix it one last time, cook for a few more seconds to evaporate the bulk of the alcohol and it’s cooked.
